Zucchini Banana Nut Muffins

I made these muffins tonight in an attempt to salvage some leftover ingredients (a couple of extra-ripe bananas and half a zucchini leftover from dinner).  The result?  A delicious and nutritious dessert that will also make a great breakfast tomorrow morning.  Yum!

1 1/4 cup whole wheat flour
1 1/4 cup flour
1 tbsp baking powder
1 tsp salt
1 heaping tsp cinnamon
1 cup chopped walnuts (I reserved a few to sprinkle on top)
1/2 cup oats
1/2 zucchini shredded
2 extra ripe bananas
4 eggs
3/4 cup vegetable oil
1 1/2 cups sugar

Preheat the oven to 400.

Combine dry ingredients in a bowl.  In a separate bowl mix together eggs, vegetable oil and the sugar.  Add dry ingredients, walnuts, oats, zucchini and the bananas and stir until just combine.  Fill muffin cups (or loaf pan) and bake for 20-25 minutes.
