Or as we call them, the sinful cookies. Eat one. You'll understand what we mean. These cookies aren't just good, they're sinfully good - mostly because we can never seem to eat just one. I found the recipe via Pinterest here and we've been enjoying them ever since.
11 tbsp unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
1/2 tsp sea salt
1 tsp cinnamon
2 1/2 cups flour
1/2 cup semi-sweet chocolate chips
1 cup mini marshmallows

3 regular sized Hershey's bars, divided into pieces
1-2 packages of graham crackers, divided into squares
Combine flour, baking soda, sea salt and cinnamon in a bowl and set aside. Cream butter and sugars in the bowl of an electric mixer. Add eggs one at a time. After eggs are fully incorporated add the vanilla. Turn your mixer to low speed and slowly incorporate flour mixture. Once incorporated remove bowl from mixer and fold in the chocolate chips and marshmallows by hand. Cover and refrigerate for about an hour (or overnight).

Once incorporated remove bowl from mixer and fold in the chocolate chips and marshmallows by hand. Cover and refrigerate for about an hour (or overnight).
Meanwhile, preheat your oven to 375 and arrange graham cracker squares on your cookie sheet. When you are ready to bake your cookies, scoop dough onto graham cracker squares. I use an ice cream scoop with a 1-1.5 inch diameter and this seems to be the right amount of dough. Bake for five minutes. Remove from oven and press Hershey's squares onto each cookie. Return the cookies to the oven and bake for another 5-7 minutes. Let the cookies cool completely (this will be difficult because they look so delicious, but is necessary because of all of the gooey ingredients) before cutting into squares and serving.
